Ingredients: |
1 pound lean ground beef or chicken
1/2 cup chopped onion
1/2 teaspoon salt
8 corn tortillas
1/2 cup cooking oil
1/2 cup canned or bottled taco sauce (I use salsa)
1 cup shredded monterey jack cheese
1/4 cup butter
6 tablespoons all purpose flour
2 teaspoons instant chicken bouillon
2 cups water
1 cup sour cream
1/4 cup chopped green chilis |

Directions: |
1. Cook meat and onions until meat is brown; Drain off any excess fat.
2. Add salt.
3. Dip tortillas in hot oil; ( I just heat over gas burner on top of stove) fry quickly until limp. Drain on paper towels.
4. Spoon equal portions of the meat mixture into tortillas.
5. Top each with 1 tablespoon taco sauce and cheese.
6. Roll up; Place seam side down in a lightly greased 10 x 6 baking dish.
7. In medium saucepan melt butter; add flour and bouillon granules stirring until smooth.
8. Gradually add water.
9. Cook, stirring often until thick.
10. Remove from heat and stir in sour cream and chilis.
11. Pour mixture over rolled tortillas.
12. Top with remaining cheese.
13. Bake at 400° for 15 minutes. |

This is a Southwestern/Mexican dish.
I sometimes add a little mexican spice. This dish can be served
for company with a green salad and maybe a side of refried beans.
